This is a quick sandwich I threw together last week or the week before. My boyfriend was eating the meal I had put together for him for lunch that he did not eat because he went out to lunch with the guys at work -- and because I did not want to make anything, I went simple! I took out my handy dandy pita bread that I love so much and heated thru a Morning Star Spicy Black Bean veggie burger in the microwave. I`m not a vegetarian, but Morning Star makes some of the best vegetarian substitute dishes that I have tried. I particularly like the spicy black bean the most.
I cut the burger in half and layered it onto the sandwich, added a slice of fat free american cheese, then put on some spicy brown mustard and ketchup. I then topped it with some sauteed peppers and onions (seasoned with red cayenne pepper) and then topped it all with some bagged salad. It was so yummy and filling. You can tell what you`re eating is not beef, but with all the condiments and toppings it`s not increasingly obvious.
