Spicy Asian Eggplant

I know eggplant may not be your favorite vegetable, but if done the right way, eggplant can be really delicious. I love roasting the big fat eggplants we find here in America and also making eggplant parmigiana Italian style whenever I have friends over. The best way to cook eggplant in my opinion, is to fry them. I know this may sound really unhealthy, that is why I urge you to only make this dish once in a while :)


2 Asian Eggplants
3 Tomatoes
4 tbs Sambal Olek
Salt and Sugar adjusted according to your liking

1. Slice Eggplants in halves and then cut them into quarters before deep frying them in vegetable oil. Set aside.
2. Slice tomatoes and then lightly apn fry them in oil. Add Sambal olek, salt and sugar accordingly.
3. When tomatoes are almost done, add in eggplant and let it simmer.
4. Serve with rice
