I found this recipe for Mini Mexican Chili Bites while browsing one of my favorite food websites today.
I was in the mood to cook, but something simple-so I decided to give this recipe a shot because it looked super easy and super delicious.
I used homemade flour tortillas for the cups, cutting out each round circle with the top of a drinking glass. Each tortilla made about three circles.
Then I put a spoonful of chili in the cups. I used Nally Original Chili with Beans. Like the recipe suggests, I use the back of the spoon to press down the chili so it doesn`t spill.
After filling the cups with chili, I put a generous amount of shredded colby jack cheese on top.
Finally I finished the cups by topping them off with some diced jalapeno instead of black olives (I don`t like black olives at all and thought the jalapeno would be a better fit for the recipe anyway).
I put the cups in the oven (preheated to 425 degrees) for exactly 12 minutes. After cooking I let the cups cool for only a minute and then put a tiny bit of sour cream on top of each cup.
They were delicious!
I think next time I will use fresh chili ingredients instead of used canned chili. I would recommend getting fresh ground beef and cooking it with seasoning, and then mixing in the beef with a little refried beans and putting that in the cups instead of the chili because I think the flavor would be ever better and it would be healthier!
