I was in the mood for some Spanish potato salad this afternoon, so I made myself a small serving of it, enough for two helpings. This is something my mother had learned from a friend how to make and has made it ever since. I really enjoy it because it`s quite different from the run of the mill potato salads.
For this potato salad all you need are peeled, diced potatoes that you boil until done along with some eggs. When drained, you add the potatoes and peeled eggs into a bowl and mash but not all the way, leave it a mashed but chunky consistency. Add in diced pimento, Adobo and mayonnaise. Mix together. Please note this is not a potato salad that you overload with mayo, you put just enough to bind it all together and you add Adobo to your liking. This is also a potato salad that I enjoy eating warm. When this has been in the fridge, I actually microwave it for like 15-20 seconds to get the chill off and to warm it a bit.
