I made this casserole and it is SO easy! You just microwave a spaghetti squash, mix in onion, red pepper, sour cream and shredded cheese and bake for 30 minutes at 375 degrees. It comes out so creamy because of the sour cream and a little spicy because of the red pepper. It goes great as a side to any meat or is good enough to eat on its own! It is super healthy and no carbs too!
