I had a spaghetti squash collecting dust on my kitchen counter, so I decided to use it in a casserole since I had recently seen a recipe. I usually just put pasta sauce on the microwaved spaghetti squash strands and call it a meal. I was getting tired of that combo though so this casserole was a nice change. It is very low calorie because it is just a veggie, yet tastes like it is tons of carbsbut its not. :-) It has red pepper flakes which add a lot of flavor and a little spice to the dish. The sour cream makes it so creamy and the cheese on top gives just a little bit of crunch. Here is the recipe from Dandy Dishes that is so yummy I hope you try it!
