Although like most squashes, this is a fall vegetable, it can easily be found year round at your local grocery store. Spaghetti squash has become a favorite of mine because it is so light and versatile and can be used as a substitute to carby pasta. To cook a spaghetti squash is easy - just poke it a few times with a knife and then pop in the microwave for around 10 minutes. Then cut in half and scoop out the spaghetti like strands. I like to top mine with meaty pasta sauce and parmesan cheese. It is a great way to get your fiber and cut back on carbs. Or you could bake it into a cheesy casserole and trick yourself into thinking it is like hash browns. These are my favorite ways to eat spaghetti squash, you should give it a try!
