Southwestern Potato Salad

I had this for dinner last night! It`s a Bobby Flay recipe. This makes enough for about 5 or so people.
-12 small potatoes (around 3-4 lbs)
-1 cups prepared mayonnaise
-2 tablespoons Dijon mustard
-2 tablespoons fresh lime juice
-2 tablespoons ancho chile powder
-½ teaspoon cayenne powder
-1 large beefsteak tomato, seeded and chopped
-¼ cup chopped cilantro
-1 jalapeno, finely diced
-2 scallions, chopped, white and green parts
-1 medium red onion, halved and thinly sliced
-4 cloves garlic, finely chopped
-Salt &+ pepper

O1. In a large mixing bowl, mix together everything except the potatoes. Add salt &+ pepper to taste.
O2. Wrap saran wrap over the top of the mix and place it in the fridge.
O3. Slice the potatoes into 1/2 in thick pieces. Place the slices in a large pot, making sure that there is an inch of water covering the slices. Add around a tbsp of salt. Cook the potato slices for around 13 minutes, or until they`re tender
O3. Remove the mix from the fridge and add the potato slices.
O4. Serve &+ Enjoy!
