This was my dinner earlier last week - a yummy delicious Southwestern Chili Taco Salad!! I had wanted something different to eat and while visiting Trader Joe`s I picked up a container of their turkey chili with beans to try out. I figured I could either bring some for lunch or share it with my boyfriend as a meal -- so I went with the later of course. I heated the chili up per the instructions and went ahead making the salads. I used a regular tossed salad (lettuce, carrots and tomatoes), then topped it with some diced white onion (I also saved some to put on top of the chili -- reminiscent of Texas Roadhouse chili!). I lined some mini Tostito nacho chips along the outside of the plate, topped the lettuce with the chili then put some salsa at the four "corners" of the plate and then added a dollop of sour cream to the top.
This was seriously a delicious meal! Before I was even done taking my photos, I looked over at my boyfriend who was mowing down his plate. I laughed, asked if he was really hungry and he looked at his plate, nodded (rather surprised he ate so quickly) and kept mowing away.
The chili was decent, the only thing I`d say is I wished they didn`t break the meat up SO finely because I tend to like a heartier chili. But it was good for a quick, simple meal! If I recall correctly, the entire container of chili only costs $3.99.
