This is a recipe I learned in my cooking class last year. It`s a wonderful recipe that I love to make and my whole family loves it!
Sour Cream Coffeecake
1/2 Cup (1 stick) butter
1/4 C + 2 Tablespoon sugar
1 1/2 eggs
1 1/2 C sifted flour
1 1/2 teaspoon baking powder
1/2 t salt
1 cup (8 oz container) sour cream
2T sugar and 1/2 t cinnamon
-Preheat oven to 350 degrees F. Grease and flour an 8 inch cake pan
-Cream together butter and sugar
-Add eggs to cream mixture and blend. (To get 1/2 egg, crack an egg and mix it as if you were making scrambled eggs and pour half the egg into the mix.) -Sift and measure flour. Re-sift flour with baking soda, baking powder, and salt.
-Add sifted dry ingredients to the creamed mix.
-Add sour cream and blend until moistened.
-Create the filling: Mix the 2T of sugar and 1/2t of cinnamon in a small cup
-Spoon half the batter into the pan.
-Sprinkle part of the filling over the batter.
-Spoon remaining batter over filling -Top with remaining cinnamon-sugar mix
-Bake at 350F for 40-45 minutes
