I had the option of either eating strawberry shortcake or create my own dessert today so I opted for creating my own dessert.
Personally, I really hate whipped cream though I know a lot of people who love it. It`s something with the texture and mild flavor that gets me. I just don`t fancy it. So when we ordered a strawberry shortcake, which is mostly made with whipped cream, I decided to go for something a bit more healthy and tasty.
I peeled 3 clementines and put 1/4 cup of vanilla ice cream on top =) That`s a good 1.5 servings of fruit right there. I can`t eat too much ice cream as I`m lactose intolerant so 1/4 cup is about all I can take.
The creaminess of the cake got replaced by ice cream and the tartness of the strawberries got replaced by clementines. So overall, I didn`t think I missed out on much. Plus, this was a bit more healthier as there was less butter and processed sugar and fat in my dessert =)
