Snickerdoodle Cookies

These cookies are delicious and chewy.
Very sweet and a original nice cookie.

We`re making these in my Culinary Art class.

1/2 cup butter
1/2 cup Crisco shortening
1 1/2 cups white sugar
2 eggs
2 teaspoons vanilla extract
2 3/4 cups all-purpose flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/4 teaspoon salt
4 tablespoons white sugar
3 teaspoons ground cinnamon

Preheat oven to 400 degrees F.
Cream together butter, shortening, 1 1/2 cups sugar, eggs and vanilla. Blend in flour, cream of tartar, soda and salt. Shape dough by rounded spoonfuls into balls about the size of a walnut.
Mix the extra sugar and cinamon in a Ziploc bag; roll balls of dough in mixture. Sprinkle a bit of extra sugar on top. Place 2 inches apart on ungreased baking sheets (I use parchment paper).
Bake 8 to 10 minutes, or until you see the edges bein to crack. Allow to sit on sheet for 3 minutes then transfer to a cooling rack.
