Today, my snack of the day was a quinoa parfait (it rhymes, lol)! It consisted of quinoa, honey spiced apples, and vanilla yogurt. It was pretty good, and quite healthy, I think!
Quinoa is a source of complete protein (as opposed to beans or nuts, which are not), so it`s a great snack for re-fueling. I normally eat quinoa in savoury dishes, but it can pass as a grain or cereal, even though it`s a seed. In fact, a lot of people think that it *is* a grain, which it technically isn`t! Some people sub it out for hot oatmeal for breakfast. Personally, I hate the consistency of porridge, so I never eat it. I don`t think I`d like warm, sweetened quinoa for breakfast, either - blech. But when served cold in a yogurt parfait, it is pretty decent. I wouldn`t go so far as to eat it in an ice cream parfait, though! It is far more nutritious than it is delicious, hehe.
I will probably eat something like this again if I am in a rush, but I prefer other snacks, such as carrots and hummus, or a muffin, to this particular dish.
