I have had an intense craving for green onion pancakes, also known as scallion pancakes, so since I was home, I decided to make some for myself. It`s not like a traditional pancake that you would eat at breakfast, it`s savory and more meant to be eaten as a snack. I feel that it`s a lot better to make it at home since it`s super easy and you can control how much of what you want to go into it. Since I love green onions, I made sure to add a bunch to my batch.
I started off making the dough, which is just 2.5 cups of flour and 1 cup of water. It yields about 8 pancakes sometimes more depending on how big you want it. After making the dough, I spread some oil onto the rolled out dough, added some salt, and then threw on some green onions. After that I rolled it back up, coiled it, and then rolled it out into an almost circular shape. Very simple to make and only costs a couple of cents per pancake which beats paying about $2 for 1.
I pan fried it for about 3 minutes per side and cut it into wedges. It was super tasty and had a very strong green onion taste which I liked. I didn`t add to much salt since I feel that it overwhelms the green onions. Mine never turn out that pretty but I think that`s because I don`t use a rolling pin. As long as it tastes good, I`m happy. I oiled the extra and wrapped them in wax paper and put them in the freezer. Have any of you ever had green onion pancakes? Does it sound like something you would try?
