I picked up the nacho chips and nacho cheese at the store almost 2 weeks ago and havent gotten around to making nachos until Friday night! I had eaten good all day and since I had a lot of points left over for the day (I follow Weight Watchers in case you arent aware) I decided to make myself a plate of nachos. Nachos are one of those comforting foods I used to have growing up. My mother made hands down THE best nachos ever! I havent had nachos in, well, forever, so I decided to make them in a healthier way and by that I mean counting out my chips, measuring out my cheese, sour cream, etc. When my mom made them she used Cheez Whiz that you melted in the microwave, but I used a jar of Salsa Con Queso that I picked up at Wal-Mart that was nice and cheesy but had a bit of a kick to it thanks to the medium salsa. I melted that in the microwave and poured it over my chips, then added a sprinkle of diced onions and chopped tomatoes. I added a dollop of sour cream and salsa on either side of the plate. Typically I would have also added green pepper AND jalapenos but I didnt have either so I just used what we had on hand. Overall, it was a great snack and totally nailed the nacho bug on the head.
