This was another recipe I used during my university days of being extremely frugal yet wanting healthy meals.
One of my favorite vegetables is corn. I love the crunchiness and sweetness of it and I love it mixed with rice. Almost every meal that I eat with rice, I add corn to.
This is a very cheap recipe, as you only need some rice, a tablespoon of butter, 1/4 cup of almond milk and a can of corn. A can of corn actually goes a long way. I generally use a can of corn to make two meals.
The ingredients used would only cost you about $2 since almond milk, butter and rice is bought in bulk and can last awhile.
Cook the rice in a rice cooker.
While the rice is being cooked, take 1/2 a can of corn and grill it with butter in a pan.
Once the corn is cooked and crisp, you will know when you hear some crackling sounds, add in 1/4 cup of almond milk and a pinch of salt. This adds more flavor and would make your sauce. Remove from heat and wait for the almond milk to become more viscous and then pour over freshly cooked rice.
You will end up with a very sweet and aromatic sauce made with corn and butter and it goes great with rice!
