I absolutely love salsa and chips for a healthy snack-especially if it is homemade! I usually don`t like to strictly follow recipes, and this can just give you a rough idea. Add what you like in salsa!
What I used:
-1 can of black beans, garbanzo beans, and black eyed beans (drained)
-1/2 of a medium sized onion chopped
-juice from about one lime
-salt and pepper to taste
-2 small tomatoes diced
**other ideas to add-cilantro, Mexican seasoning packet, etc.
1.Mix all ingredients together in a large bowl, then cover and let marinate in the fridge for at LEAST 30 min. I personally like to over night!
2. Ready to serve! It`s THAT simple :)
I decided to spice things up by melting sharp cheddar cheese on my tortilla chips first. My favorite kind of chips are from "On the Border" which I got from a wholesale store, and I just used whatever shredded cheese I had which was sharp cheddar.
1. spread out chips on a microwavable plate
2.sprinkle cheese on top, then put sheet of wax paper on top
3. microwave 20-30 sec. depending if you like your cheese soft, gooey, or hard.
