This was my dinner for tonight. I went with something very simple and relatively quick to whip together. It gets a good grade on the health front, too.
I had a chicken breast (boneless, skinless) that I seasoned with grill seasoning, garlic power, and some salt. They were put into a glass baking dish and into the oven (heated to 350 degrees) for 30 minutes. This put it just over 165 degree for the internal temperature once cooked (which is the recommended temp).
For my sides I went very basic. I chose asparagus which I coated lightly with extra virgin olive oil, salt, pepper, and garlic powder. They were put into another baking dish and went into the oven at 475 degrees for about 8-9 minutes. Roasting them really brought out their flavor.
The other side was broccoli. I cut off the florets and put them into a large pan with just a tiny bit of water. I don`t have a steamer so this is what I do. I then seasoned with a McCormic veggie seasoning, salt, and a sprinkling of chicken bullion. I put the lid on and cooked until the broccoli was tender and the water gone.
Everything had fantastic seasoning. I have some left overs, which I`ve already portioned out and put into containers for tomorrow`s lunch.

So, as you can see it is a very light meal. Very tasty, though! YUM!
