I love to make shepherd`s pie. I am always trying new ways to make things. This is one of those times. I typically make a sort of gravy to pour over the meat before I add the potatoes and such. This time, though, I decided to take a tip from a traditional shepherds pie and go with a tomato paste.
(sorry, by the way, that the only photo I have is of it in the baking dish. You can`t really see the layers)
What I did was start by dicing up some onion and garlic. That went into a pan with ground beef. I cooked all of that together, seasoned with some salt and pepper. Once it was well cooked, I put in a few tablespoons of tomato paste and beef bullion. I think a lot of people put in a bit of worcestershire sauce but I didn`t remember to do that until it was way too late...so none of that for me this time. I let it simmer while I made my potatoes. I prepared my mashed potatoes as I would normally: a bit of butter, milk, salt, and pepper. For the layering, I put the meat down first, then some corn, peas, carrots, and then the mashed potatoes. Everything got topped with some shredded cheddar cheese.
I have to say, doing it with the tomato paste and beef stock was delicious! It gave it a bit of a different flavor than a gravy would. I think I`ll be doing it this way more often. Even the picky boys enjoyed it.
