I skipped breakfast this morning (tsk, tsk) so that meant lunch rolled around and I was borderline starving. I wasnt entirely sure what I wanted. I didnt feel like a BLT for lunch so I opted to go with tuna fish. I started to make it, and then figured Id make myself a tuna melt since I havent had one of those in forever!
I always mix my tuna with red onion, black pepper and sea salt. I typically add celery in but I didnt have any, so thats why its not in there. I added in my light mayonnaise, a squirt of yellow mustard and mixed. I didnt feel like white bread, so I took a pita bread out of the freezer, let it defrost, cut it in half and added a half a slice of cheese to each bread, loaded it with my tuna and grilled it with some spray butter on the outside of it.
When the cheese was melted and the bread was nicely golden brown and crispy, I set it on a plate, added some sliced tomato, lettuce and crushed hot peppers to it. Overall, a great tasting lunch and a nice twist on a classic sandwich!
