This is my very tasty and filling lunch of the day today!
I had some Thin & Trim deli chicken breast in the refrigerator that I had picked up at the market and decided I needed to use it, especially since I don`t eat any deli meat after it`s been in the fridge a few days. I used to not really like deli meats, but the past year it has been something I really have incorporated into my lunch "menu" if I don`t have any other options that present themselves or that I`d rather have.
I ended up heating my large pita over an open flame to make it nice and soft. Then put 2 ounces of thin & trim chicken breast on it, some diced white onion, pickle and tomatoes, along with some sliced lettuce. I had vegetarian grape leaves I purchased from my local Lebanese bakery in the refrigerator, so I decided to add 2 of them to my sandwich since I need to work on finishing those off. Then topped it all with two large scoops of crushed hot peppers, oregano and fresh ground pepper.
It was delicious and quite tasty! The grape leaves and the hots definitely gave it a nice kick.
