This is my lunch of the day! I picked up some turkey kielbasa at the market yesterday because I had heard Jennie-O`s brand was better than Hillshire. I enjoy kielbasa because it`s something I`ve grown up eating, especially since I`m a quarter Polish. My grandmother used to make kielbasa and sauerkraut sandwiches all the time and my mom continued with that tradition.
While my kielbasa was set to boil, I put a tablespoon of butter in a pan, added in my chopped onions and caramelized them in the butter. I added black pepper and sea salt, then added in a can of sauerkraut that I had drained and squeezed all the liquid out of. I cooked the mixture together until it was heated through.
When my kielbasa was ready, I measured out my 2 ounce serving, sliced it in 3 pieces and layered it on my bread. Added Gulden`s spicy brown mustard, some horseradish then topped it with my kraut and onion mixture. A delicious and VERY filling meal. I had about 1/4 of my sandwich left that I just could not finish.
