Shannon`s DOTN Sausage, Pepper amp Onion Pasta

I knew I was making sausage and pasta for dinner yesterday, but I didnt want to just have plain pasta with a sausage on the side. I decided to take a classic that I enjoyed (sausage with peppers and onions) and switched it up a bit by incorporating one of my favorite dishes into pasta. It came out really well and Im glad I decided to experiment!

I took my raw sausage (I used chicken sausage) and put it into a baking pan, which I sprayed the bottom of the pan with non-stick cooking spray. I then added in a sliced up medium onion and threw in some sliced up red pepper. I put this in the oven and let it bake at 350 for 20 minutes, then shook the pan up, turned the sausage and cooked roughly another 5-10 minutes. While the sausage was cooking, I put a pan of water on to boil and seasoned it with sea salt. I then added in some Barilla Gemelli pasta to it and cooked until aldente. Since my sausage already had the peppers and onions covered, I put a sauce pan on the stove, added in some minced garlic, a can of diced tomatoes and a jar of Smart Light Prego sauce. I then seasoned it up with dry seasonings (pepper, salt, red pepper flakes, Italian seasoning, and garlic powder) and let it come to a slow simmer on the stove. When it was heated through I turned it off and let it rest.

When the pasta was drained and the sausage was out of the oven, I added the roasted peppers and onions to the pasta, sliced up the sausage and added that to the pasta and added the sauce in to coat. I also had some sauce on the side, so additional sauce could be put over the pasta if wanted.

It was a great meal and a new twist on two separate classic dishes in my little world.
