This here is my dinner of the night! My weight loss has halted for the last three weeks and its been really annoying me, so Ive decided to switch up my eating. I found myself being a habit eater in a lot of ways and thats not a good thing when youre trying to lose weight. I was looking up recipes online and stumbled upon this one for a Chicken Taco Chili.
http://www.skinnytaste.com/2008/11/crock-pot-chicken-taco-chili-4-pts.html. I had a lot of the ingredients in the house already, but picked up some chicken and the diced tomatoes at the market. My boyfriend had cleaned the chicken for me (I have issues in that department) and I woke up early this morning, cut up my onion and put everything in the crock pot per the directions and let it cook. I actually opted for cooking it on high for 6 hours (well, it was actually 7 hours since the BF and I went out and we were gone a little longer than I expected). I shredded the chicken up and put it back in and set it to low since it was completely cooked. I put some white rice in the rice cooker and ended up paring the chili with that. I can tell you this was hands down an AWESOME and insanely simple recipe! If you like chili and if you like Mexican-ish foods, definitely give this a shot! You wont be disappointed.
