Shannons DOTD Stuffed Pepper Soup

This is my dinner from Saturday night. I saw this recipe online and decided to give it a shot. One of the ladies I used to work with always talked about stuffed pepper soup, but I had never tried it. And I can say its REALLY tasty! If youre interested in the recipe I followed, you can find it here: The great thing about this is that it tastes just like a stuffed pepper would! I was a little hesitant at first because you cook the soup and rice separately and you add the rice into a persons serving and stir it in, in essence thickening it up in their bowl. Im not a huge soup lover, so I was going out on a whim making this, but Im glad I did because I will be making this again! The only thing I changed in this recipe was I added Italian seasoning in place of the marjoram (its similar to oregano and I didnt have any and wasnt going to buy a bottle of it) but I really love Italian seasoning, so I used that. It was a super simple meal and the soup portion was done in under 30 minutes. The only thing that took longer was my brown rice in the rice pot because I forgot to start it earlier and started it right before I started cooking. As the recipe states, all you need to do is brown your meat in a pan, add in your chopped onions, peppers and garlic and cook for a few minutes basically sweating out the veggies. You then add in your tomatoes, tomato sauce, spices and chicken stock and let simmer. And wah-lah, youre done! Right before serving, add a scoop of brown rice on top of the soup and stir in. Simple and delicious! I like it with the rice being added into an individual serving because this way the rice doesn`t get soggy and gross by sitting in the broth. My boyfriend loved it and I loved it and we had it for lunch today. Definitely a great meal!
