This is my dinner from last night and since we have a ton of leftovers, tonight as well! Since my boyfriend and I went to Boston and popped over to the fruit market I went a little cray-cray with the vegetables and got some of everything I saw. When trying to figure out what to have for dinner, my boyfriend mentioned stir fry, so off and running we went with that idea. We took some chicken out of the freezer to defrost and when it was defrosted, he cleaned it and cut it into strips. Then we both worked on prepping the fresh veggies. This particular stir fry has chicken, broccoli, white asparagus, onions, carrots, green beans, canned baby corn, canned bamboo shoots and sliced and whole water chestnuts in it. It is a ton of vegetables, but I love a ton of veggies in stir fry!
Stir frys are one of the easiest things you can make and they are so versatile. You can use any type of meat you want, chicken, steak, pork, turkey and mix it with any assortment of vegetables you like. I cook mine up with a little sea salt, black pepper, soy sauce, and teriyaki sauce. I then serve this over some steamed white rice, which I make incredibly simple by using my rice cooker. Dinner is served in no time!
