This is my dinner of the day!
My boyfriend is thankfully feeling better, the 24-hour bug has left (fingers crossed it doesn`t return!) and he was feeling up to having some pasta for dinner. I made him some angel hair (not pictured) and made myself a serving of whole wheat pasta. I eat all types of pasta, but I find the whole wheat is a lot more filling and it satisfies me.
Since we decided to have pasta on the fly, I had no time to even throw together a sauce even a doctored up one. So I topped it with a simple Barilla marinara sauce that I heated up. While the water was boiling, I put some gluten free chicken parm cutlets in the oven to cook and when those came out of the oven 25 minutes later, dinner was ready to be served. I know the chicken looks like a lot, and visually it is, but each piece (they come packaged 2 per box and they are not cooked) is 5 ounces.
This was a very good meal and tasty, especially for something that was thrown together in 25 minutes.
