I have been craving seafood like none other! I`m really wanting to go eat at a seafood restaurant but my husband`s schedule with work has been so crazy that we`ve not had time to plan a date night and go. What`s a girl to do, then, to remedy a seafood craving? Make it herself! That`s exactly what I did last night. It helped, but didn`t satisfy the craving. What I really want is crab legs, shrimp, and/or lobster! LOL! Scallops are delicious, though,and super easy to make...so they will have to do for now.
I made bay scallops with garlic mashed potatoes and asparagus. Mmmm!!
I have mentioned how I make my mashed potatoes as well as my asparagus in past food posts, so I`ll just tell you about the scallops.
First I rinse them down and then throw them into a skillet with a bit of melted butter and minced garlic. When they start to cook a bit I season them with salt, pepper, onion powder, and a splash of lemon juice. THAT IS IT! I don`t go overboard with the seasonings, either, because I want the flavor of the scallop to be detected and not covered up. You don`t want to over cook them, either, or they`ll become rubbery and chewy.. blech! Just a couple of minutes (AT MOST!) on either side. Since these are small bay scallops they definitely don`t take long. Adjust your time of cooking depending on the size. If you get the jumbo ones add a minute and a few seconds and you`ll be good to go.
