This weekend I decided I needed to make something different, so I put this together early in the morning and let it sit and cook away in my crockpot. I love crockpot meals they are so easy to throw together and it cooks on its own, at its own temperature gauge that you set it to. I`ve made a chicken taco chili similar to this before and it was delish, so I was hoping to try this out. Needless to say it was very good, very filling and very flavorful. The first night I had this, I just had a bowl of it (pictured), the next night I had it, I had it over pasta and it was very yummy. It`s not really soupy because there`s only a can of broth in the entire thing, it`s more like a chicken chili with a sante fe twist sort of a meal. I`m not much of a soup fan, so the fact there wasn`t much broth in the dish AND in my bowl made it a lot easier to eat (not flavor wise, subconsciously wise). I really did enjoy this meal, all it took was 6-hours in the crockpot and it cooked itself. If I were to make this again, I`d add raw onion into the crockpot since onions are just something I incorporate into, well, everything. The only thing I did not follow was the scallions portion of the recipe. I BOUGHT them, I just forgot to cut them up and put them on top of the dish. Oh well.
