I decided to have chicken strips for lunch and to make it healthy it ended up being a salad. In the salad all I have are spinach leaves, diced tomatoes, cucumbers, chopped up chicken strips and grated marble cheese. I also tossed a few nuts and cranberries in. For the dressing, I used a sun-dried tomatoes vinaigrette. A great simple way to incorporate veggies into your diet!
