Last night for dinner I had some people come over so I cooked and one of the things I cooked was roasted zucchini. A family friend grows zucchini and had a bunch and ended up giving some to me and besides frying them in tempura batter I had no idea what to do with them. So I took it to pinterest to see the different options I can cook zucchini and I saw this cool recipe for zucchini chips. I thought it was a good idea but it seemed time consuming and I didnt have much time so I opted to just roasting them. Roasting any vegetable is super easy and good at the same time so thats what I did. I used two zucchinis and cut them up into medium sized chunks since I know they would shrink when cooked, then I I just drizzled it with olive oil and seasoned them with salt, pepper, some italian seasoning. I put them in the oven on convection at 400 degrees and baked them for about 25 minutes then took them out sprinkled them with parmesan cheese and but it back into the oven for another 10-15 minutes. I honestly just eyeballed when it came to the timing. I waited until the parmesan cheese was melted and a little browned and then took it out of the oven and that was it! Super easy and it tasted good. It was soft on the outside yet still tender on the inside. I also cooked salmon that night but didnt get a chance to take a picture of it. ______________________________________________________
