Roasted Onion Potatoes

This is something I made today for myself and my son. It seems odd to just eat potatoes, I know. BUT, I`m letting my son choose what he wants today (in combination with his regular meals) because he is having a surgery Friday morning and won`t be allowed to eat beforehand and we were told he won`t really want to eat after.. and even when he does he can only have clear liquids. Sooo, I`m spoiling him a bit today and making sure his little tummy is as full as he wants. He asked to have some potatoes shortly after we had, mama made some oven roasted potatoes.

This is super, super simple to make. It is almost ridiculous how easy this is. You can follow the exact measurements from the back of the Lipton box. That is where I first saw it. It only requires 3 ingredients: potatoes, a single package of dry French onion soup mix (generic is perfectly fine. Lipton is the most well known brand for this, though), and a bit of vegetable oil. You simply dice up your potatoes, pour the onion mix and the veggie oil over the top, and toss until the potatoes are coated. Put that into a baking dish and throw into the oven at 425 degrees for about 45 minutes (stirring every so often). Basically, you want them to brown up a bit.

Voila. Simple as can be. We ate ours with a bit of ketchup to dip them into. YUM! LOL, they are so easy and quite tasty.
