One thing I miss about summer is having fresh cobs of corn and grilling them. Nothing beats that =) I`m more in love with grilled corn than I am with hamburgers and hot dogs during a barbeque.
Here is my favorite way of preparing corn.
A lot of times, the corn I get is very sweet, overly sweet even. So I even it out by first boiling it in chicken broth. This helps to get the corn to retain some more savory flavors.
Once its been boiled for 10 minutes, I put it on a grill with some butter and canola oil. Butter burns very fast which is why I use canola oil as well. I put the corn in and grill them up until each side is a nice golden brown. Then I add some salt, pepper, paprika in it and shake it around the pan. This way, the oil helps make the seasoning stick to the corn.
The end result, you get very delicious grilled corn that`s seasoned to perfection =)
