There are many ways to prepare egg plant - you could stuff, grill, bake, roast, and stew. My dad chose to roast egg plant and he cooks directly on the stove! After he roasts the eggplant on the stove, it gives off a smoky flavor and then peels and tops off with green onions/olive oil sauce.
