We did a lot of running today and by the time we got home none of us were very hungry. It was kind of a "grab left overs or whatever you can find in the fridge" kind of night. I decided to make some pin wheels. This was so super simple... its nuts. Again, I wasn`t very hungry so I only ate one...and I had a hard time finishing that.
I used a low carb, high fiber tortilla and spread on some spinach & artichoke spread. Then I took a single slice of swiss cheese, cut it in half and layed each half across the tortilla. The last ingredient was 2 slices of thin, deli roast beef. I rolled up the tortilla and cut it in half. It was full of flavor and satisfying, but very easy to whip together.
This would make a good, light lunch. I`m going to have to make some through the week for my lunches with a side of some berries or something. YUM!
