Ricotta and spinach tortellini

There is one thing I really like to do: COOKING! When I am working from home I have more time to search for new recipes online and to create new dishes. Usually when I am alone I only remember that`s lunch hour when I am feeling very hungry so I usually browse the fridge and try to come up with something from whatever I find there.
Today I mixed zucchini, spinach, basil and mushrooms with this delicious ricotta and spinach tortellini. I made a stew with these ingredients and add some cream I had in the fridge for almost three days that I really needed to use - I hate throwing food in the garbage! After boiling the pasta for 6 minutes I added it to the vegetable stew and I had a very healthy and nutritious meal in less then half an hour!
