One of the easiest, best desserts you can make! If you love red velvet cupcakes with vanilla icing you`ll love these! You can also use buttercream or chocolate, whichever one suits you best.

What you need:
1. Red Velvet cake mix
2. 1 Large Egg
3. 1 Teaspoon Vanilla Extract
4. 1/2 cup butter
5. 1 can vanilla, chocolate, buttercream (whatever kind of frosting you want to use)
Melt the butter & set aside to cool down. In a large mixing bowl add cake mix, egg, vanilla, and cooled butter. Mix with hand until dough is formed
Form dough into a 12 inch log. The next part of the directions I didn`t do. It says to do it on wax paper and sit in freezer for an hour or over night. Instead I just skipped this part.
Preheat oven to 350 degrees. Lightly grease baking sheets. Unwrap dough & place on wax paper. Use a knife and cut into 1/4 inch slices, You make 48 slices. Place on cool baking sheets about 2 inches apart.
Bake 1 sheet at a time. Bake about 10-12 minutes or until ready. Cool for 1 minute & place on wire rack.
Spread frosting on half of the cookies. Then top with another cookie to make a yummy sandwich. This recipe makes a 24 cookies and 1 or 2 fills you up. SO it`s great for parties.
