Hi everyone! So quite a while ago maybe around the beginning of the month my mom received her Cooking Light Magazine! I love looking through here for recipes because it always has some really good ones. They are always super healthy and packed with some of my favorite foods! Since it is the season of Lent, yes I`m Catholic, you cannot have meat on Fridays. So I am always on the lookout for meatless meals! Last months came in and it had the perfect meatless lasagna recipe! It is a Butternut Squash Kale Lasagna! I am in love with the sweet taste of butternut and kale is my new favorite green! The recipe makes you use a lot of pots and pans but it is worth it. You need to simply buy ready to cook lasagna noodles and lay it out. You have to wash, chop and sauté the kale with some seasonings. The butternut has to be already chopped. You layer it like you would a regular lasagna. But instead of a layer of meat sauce you have to make your own cheese sauce with a cheese called Gruyère cheese, mixed with milk in a saucepan. Once it is all layered you top it with chopped pecans. Then you bake it in the oven until it is bubbling or getting golden on top. Let it settle before cutting. The tastes of the kale, butternut and pecans go so well together. The cheese basically melts in you mouth and it tastes amazing! If you are a vegetarian and want to try an amazing lasagna recipe this is the one for you! Thanks so much for reading!
