Recipe Review: Quinoa Kale Cakes!

Hi everyone! Last week my mom found a great recipe for us to try. She is always searching the newspaper for new ones to make. This one can be easily eaten as a meal, snack or just whenever really! They are quinoa kale cakes. I already knew I was going to love it because I love quinoa and kale. If you do not know what quinoa is it is a grain that is packed with a lot of nutrients and it is so good for you! Kale is of course a delicious green but has a bit of a bitter taste to it. I am pretty sure rabbits eat kale as well. Anyways to the recipe it is pretty simple! First you cook your quinoa by boiling water and simmering it for 20 min until all the water is absorbed. Then you have to chop the kale and sauté it with some garlic. While that is sautéing you have to mix the quinoa in a large bowl. You need to mix in an egg, some bread crumbs to hold the cake together, then some parsley and any other spices that you like really. Then you stir in the kale mixture. Then take a cup and spoon some of the mixture into the bottom and pop it out to form the perfect sized cake. Then in a sauté pan add some oil and the cakes after you make them all. Then you let them brown on both sides and put them on a rack to place them when the are done. This tastes so good if you add a green side salad! The cake had all the right flavors mixed together to make it taste amazing! Overall I loved this recipe and it was so easy to make! Thanks so much for reading!
