Recipe: Chocolate Breakfast Muffins

Hi everybody. I posted some muffins I made in one of my previous posts and I would love to share this recipe with everybody. This recipe is not mine. The site where I got the recipe from is listed below.

2/3 Cup Dutch-process cocoa (or any cocoa you prefer)
1 3/4 cups unbleached all purpose flour
1 1/4 cups light brown sugar
1 tsp baking powder
3/4 tsp espresso powder, optional
1 tsp baking soda
3/4 tsp salt
1 cup chocolate chips
2 eggs
1 cup milk
2 tsp vanilla
2 tsp vinegar
1/2 (1 stick) butter, melted
coarse pearl sugar, for topping (optional)

Preheat oven to 400 degrees Farenheit. Line a standard muffin pan with paper or silicone muffin cups. If using silicone cups, grease the cups.
In a large mixing bowl, whisk together the cocoa, flour, sugar, baking powder, espresson powder (optional), baking soda, salt and chocolate chips.
In a large measuring cup or medium sized mixing bowl, whisk together the eggs, milk, and vinegar. Add the wet ingredients, along with the melted butter, to the dry ingredients, stirring to blend. Do not beat the muffins, just make sure everything is well combined.
Scoop the batter into the prepared muffin tin. You can fill them up almost all the way to the top like shown in the picture above and the muffin will bake into a mushroom shape. You can sprinkle with pearl sugar or top them with some more chocolate chips like I did if you want to.
Bake the muffins for 20-25 minutes, or until a tooth pick inserted into of the center of the muffin comes out clean. Remove the muffins from the oven and remove them from the pan and allow to cool for 15 min before serving.
