I felt like having a healthy, but filling snack yesterday, so I bought some snack-sized, seasoned cans of tuna. I also had some kale I needed to use up, so I thought, hmm...why don`t I make a sort of lettuce wrap/cup with it?
I chose Clover Leaf`s Sundried Tomato & Basil tuna for my "salad", as I thought it would taste the best with the kale (I also have Lemon & Dill, Thai Chilli, and Lemon & Pepper flavoured tuna). I washed off a single kale leaf and spooned the tuna in the middle, where the leafy part meets the stalk. It was sort of like "tuna on a boat", lol!
This "salad" tasted quite yummy - the sundried tomato and basil tuna went really well with the kale. I even surprised myself a little bit, lol. And it was a really healthy and filling snack, which I was happy about. :)
I think I will definitely be using up the rest of my kale to make more "tuna on a boat"! If you like kale (which I do - it`s one of my absolute favourite green veggies), then I`d definitely recommend trying a "salad" similar to this one.
