I was hungry tonight because I didn`t have a whole lot of protein in my day (ate a slice of pizza for dinner earlier in the day). I know when I have a lot of carbs in a day, I`m scrounging around for food - which is a bad thing. But I went with a healthier option that I made into something fun that I enjoy and haven`t had in a while.
I love chicken quesadillas and by that I mean the ones you get out at restaurants which are so filled with fat and a ton of unncessary calories from the cheese and tortilla shell that it`s not even funny. I had a half a slice of pita bread so I decided to fold it in half with 2 ounces of deli chicken meat, tossed on a slice of fat free American cheese on both sides, then sprayed each side with butter and browned it in a pan. Similar to a grilled cheese. The warmth of the flame made the chicken warm and the cheese all ooey gooey inside. The pita turned nice and crispy like the tortilla shell in a classic quesadilla.
Overall, this was delicious and since I have one pita left ... I can very well see myself making this for myself for lunch tomorrow.
