I was craving potatoes for dinner the other night and didn`t feel like having the boring old mashed or baked style. We had some bacon that needed to be used within a couple days so I decided to try something out. I chopped up four Idaho potatoes into small square like chunks and laid them out on a pan I oiled up with extra virgin olive oil. I sprinkled salt, pepper, and parsley on the potatoes and mixed it around a bit. Next I just cut up some bacon into small strips and covered the potatoes! I set the oven to 385 and they baked for about 40 minutes. Not the healthiest of meals, but super delicious! I topped mine with a dollop of sour cream and my husband topped his with hot sauce.
