Quinoa Pilaf

My sister has introduced my family to eating quinoa but I am still adjusting. There are several health benefits to eating quinoa instead of brown rice/rice in general, some benefits are: quinoa has high protein, contains iron, lysine, rich in magnesium, high in riboflavin and much more.

My sister served Quinoa Pilaf at her early Christmas party. There are red and green bell peppers, shallots, cucumbers, spinach, quinoa (key ingredient), olive oil and mint. Attached below is the recipe if you wish to recreate this. There are many ways to prepare quinoa, this is just one example.
