This is a very quick & easy meal to make. It has an Asian flavour but you can make it whichever way your like. I usually cook quinoa in my rice cooker. The ratio is just like you normally cook rice 1:2 (Rice:Water). For this soup I use ready-made chicken stock. You can use stock cube/powder etc. I have leftover roast chicken from last night. You can use any type of meat or tofu/vegetables for vegetarian option. I season the stock with some soy sauce, salt & pepper. Topped with freshly chopped coriander (cilantro) & spring onion (green onion).
