I made this quick and simple Chicken Lo Mein for dinner yesterday. My boyfriend and I had gotten home from running 2 errands after work - and after sitting in traffic, cooking dinner was the least of my concerns. So since we had to eat, I decided to make something quick. We were originally going to have chicken burgers, but upon reading the box I found we had to let them defrost a bit before cooking -- so I ended up grabbing the Chicken Lo Mein package out of the freezer. I had purchased this last weekend because it has everything in it, all you had to do was "saute" the cooked chicken in a tablespoon of olive oil for 3-minutes, add in the frozen noodles and veggies and cook for 7-minutes, then add the packet of sauce that you defrost under hot water. Sooo simple! Dinner was literally done in 10 minutes.
I will say this was quite filling. I was surprised with how filling it was. I thought it was going to be like most Chinese food tends to be -- you eat it, and an hour to two later, you`re browsing around the kitchen. I was soooo stuffed eating something else was far beyond my concern. The BF and I both enjoyed it, so this will be something I`ll pick up again to stick in the freezer for an emergency type of meal.
