Tonight was a much needed pasta night. I was craving pasta really, really bad! I didn`t want a tomato sauce pasta, so... the next option was alfredo! YUM! I will fully admit I cheated, big time, on this dinner. I used canned tomatoes and canned alfredo sauce. I heated everything up, though! That has to count for something, right? I mean, come on... after a dinner like the Moroccan chicken I made the night before I think it is fully justified that I took short cuts on this dinner.
I boiled some corkscrew pasta (cause it is what I had in my pantry) in some salted water. In another pan I cooked some fresh asparagus that I chopped up into bite-sized pieces. I put a bit of water, chicken bullion, garlic salt, pepper, and onion powder into the pan to give the asparagus more flavor. Once it was soft and the liquid had evaporated I poured in a jar of alfredo sauce. As that was heating up, I opened a can of diced tomatoes and put about half a can of that into the sauce. I let everything heat up, drained off the pasta, and served.
I wanted to put some grilled chicken into this, too, (that was the original plan) but I quickly realized I hadn`t thawed out any chicken breasts the day before. :-( fail. It was still delicious, though. I think the tomatoes and asparagus REALLY helped to bump up the flavor and add a bit of something-something to the dinner.
