I have been making this lunch for the whole week and it has been delicious, filling and healthy. I take a corn tortilla and put some shredded cheese and salsa on. I bought a rotisserie chicken this weekend so I had some leftover meat from that and put a large amount of chicken on the cheese and salsa. Then I top with another corn tortilla and microwave for 1 and a half minutes. I top with sour cream and eat with a fork since the corn tortillas get soft in the microwave. These are really good and corn tortillas are healthier than white flour tortillas!
