Pumpkin Cinnamon Struesel Topped Muffins

The weather is getting cold and I wanted to do some baking to warm the house up a bit. But another reason was that I bought some pumpkin muffins from a bakery and I loved it. I am not a fan of pumpkins but I was shocked that I actually like the muffins. So I searched for some recipes to try and this was the first one to try and it`s a keeper. So let me share this recipe with you.

2 C flour
1 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground ginger
1/2 tsp salt
1 C sugar
1 15oz can pumpkin puree
1/2 C (1 stick) melted butter
2 large eggs
2 tsp vanilla extract

Cinnamon Streusel Topping:
2 Tbsp butter, room temp
1/4 C sugar
1/4 C flour
2 tsp cinnamon (you can adjust this to your taste)

Preheat your over to 350 degrees F.
First you want to combine all the dry ingredients in a big bowl (flour, sugar, baking powder and soda, cinnamon, ground ginger, nutmeg, and salt)
Then another bowl, whisk the other ingredients together (pumpkin puree, butter, eggs, and vanilla extract). Mix until well combined. Then you add this to the dry ingredients and stir this mixture until it`s incorporated. Do not over mix the batter. Then you will fill some paper lined muffin pans 2/3 way full. Then you will top it with 1 Tbsp streusel.
To make the streusel just mix everything together with your finger or fork until everything is combined and is crumbly. Then you will bake it for 15-20 min. Take out and let cool. Now we prepare the glaze.

1 Tbsp butter, melted
1 C powdered sugar
1-2 Tbsp milk

Just mix everything together in another bowl but you should add the milk one Tbsp at a time depending on the consistency. Then after the muffins have cooled, you can put it into a zip lock bag or if you have a decorating bag, cut a tiny hole on the tip and pipe it onto the muffins. You can also drizzle it on with a spoon too.

For myself I prefer the muffins with just regular streusel topping instead of the cinnamon. 2 Tbsp of cinnamon in the streusel is too much for me but my kids love it. But after I added the glaze on it, the muffins were just prefect. So next time I think I will top it with just regular streusel and leave out the glaze. But this still tastes so good. I will alternate this, sometimes making it exactly like this and sometimes switching things around. So if you like pumpkins or are just interested in trying new recipes, give this one a try.
