Im not a big fan of baking because I hate following recipes. I love to cook because I can experiment with flavors & taste it while cooking. Since baking involves raw eggs, its difficult to taste & tweak. My favorite forms of baking are slice & bake cookies. Not only is the dough delish, but its quick & easy.
Every once in a while I get a sudden urge to bake. I dont know where it comes from, but It happens & I have to act on it or Ill feel lost. A few weeks ago I decided to bake strawberry oatmeal cookies. They came out OK, but they could have been a little sweeter. I did like the recipe & wanted to try it again with pumpkin since Fall is in full force in NJ.
I grabbed a recipe from 52 kitchen adventures & changed a few things around. Here is their recipe http://www.52kitchenadventures.com/2010/06/20/week-25-agave-nectar/
Mine was a little more like: (keep in mind I tweaked, so not all measurements are exact)
~ 1 cup whole wheat flour
~ 1.5 cups of rolled oats
~ ½ tsp baking soda
~ ½ tsp baking powder
~ ½ tsp salt
~ 3 table spoons of cinnamon (this is a guess, its probably more)
~ 1 tablespoon of nutmeg
~ 4 tablespoons of butter, melted
~ 1 single serve cup of natural applesauce (its low in sugar & chunky)
~ 1 15oz can of pumpkin puree
~ ½ cup of agave nectar (it might be more, I eyeballed, and added more to make sure it was sweet enough)
~ 1 egg
~ 1 teaspoon of vanilla
I combined all the dry ingredients in one bowl & the wet in another. I added the egg in last so I could taste the wet mixture & make sure it was sweet). I blended the two mixtures together in one bowl & put it in the fridge for an hour so it would be easier to handle. Using two spoons I placed big dollops of the cookie mixture onto a baking sheet & placed them in a preheated oven set to 350*F for about 8 minutes. I kept checking on them because my current oven is old & it can be temperamental at times. (Still havent fully moved into the new home with a new kitchen & new appliances)
They turned out to be delicious!
